As you may know I suffer from gluten and dairy allergies… which is a little frustrating when I want to eat dessert or breakfast and crave an alternative to eggs ( don’t get me wrong i LOVE EGGS especially in combination with BACON ). My Mum has just shared her coconut yogurt recipe with her ezi yo machine with me for a dairy free alternative to normal yogurt made from coconut cream instead of dairy products.
What do you need?
An ezi yo maker (you can grab one of these for around $30 at the supermarket)
1 can of full-fat coconut cream
The powder from 3 probiotic capsules (disguised their outer capsules shell, I have been using inner health plus dairy free, and also tried a healtheries version – you may need to experiment.)
2 Tbsp honey OR coconut nectar OR maple or agave syrup
How do you make coconut yogurt?
- Pour the coconut cream into a saucepan and heat over a moderate heat until warm (DO NOT BOIL)
- Pour the coconut cream into the clean jar from your ezi yo maker
- Open your 3 probiotic capsules and place the powder from inside in the capsules into the coconut cream mixture(and dis-guard the capsules outer shell.
- Mix the probiotic powder into the coconut yoghurt using a whisk.
- Add your sweetener to the coconut mixture – I use coconut nectar but any sweetener will work.
- Use a whisk to stir the mixture until it is well combined.
- Place the red plastic insert in the bottom of you ezi yo maker.
- Fill the Ezi Yo maker up with boiling water until it covers the lines on the red plastic insert
- Place your jar filled with coconut milk mixture on top of the red insert
- Pour more warm water into the eziyo maker until it comes up the sizes around the jar to keep it warm
- Put the lid on the yogurt maker and leave for 12 hours (I like to make mine before bed)
- Remove the coconut yoghurt from the yoghurt maker and place in the fridge to thicken.
Things you need to know:
- The flavor develops in the fridge each day
- Has a tangy zesty flavour.
- Keeps for up to 2 weeks
- Not all coconut creams are created equal, you will no doubt have to play around with different brands of coconut creams and probiotics to get the yogurt to the right consistency for your tastes.
